.Bulrushes: A tall light green soft fleshed marsh plant.

You will find this plant around marshes, lake sides and slow flowing streams. It grow from early spring until late fall but even after the water has frozen the root can be used as food.

Preparation: The young fresh shoots and the tender inside parts of the root stalks can be eaten raw or used as a fresh vegetable in green salad or added when boiled to stews. The young roots can also be eaten raw or cooked as you would a potato after the outer skin and fibers have been removed. The roots can be made into a flour. Clean the roots carefully, dry them in front of the campfire or in the sun and remove all the fibers from the root. Pound the roots into a dry pulp and then pound the pulp into a course flour. The floor is sweet and requires no sugar in the preparation of pancakes and bread.
